Fine Dining Under the African Sky
While many of our guests are impressed with the efficiency of our logistics or the luxuriousness of our accommodations, they are always the most impressed with the food that we serve. Indeed, the quality and variety of what our chefs can prepare in what seems like the middle of nowhere is truly astounding. We serve a blend of continental and modern African cuisine, prepared by our well-trained chefs using the freshest local ingredients.
We came to understand early on that the food is a critical part of our operation. When you put people in an unfamiliar environment, the more civilized you can make it, the more comfortable they will be. And food is one of the key variables that impacts the degree of civility perceived by guests.
Our food operations are overseen by Belinda Lithgow, one of our owners. Originally from England, Belinda comes from a culture to which concepts such as service and hospitality are absolutely fundamental, and this is apparent to guests at every mealtime.
Perhaps you are thinking that you should bring some snacks in case you get hungry somewhere along the way. You will later laugh at this notion. Each day begins with coffee or tea and a small snack on your veranda as you prepare for the day to come. Breakfast in camp will follow, sometimes scrambled eggs, perhaps an omelette or delicious eggs benedict, accompanied by toast, potatoes, fresh fruit and aromatic French press coffee grown right in Arusha. Snacks and drinks are always available on the vehicles. Lunch is typically a picnic in the bush or on the beach. Drinks and hors d’oeuvres are served at each evening’s sundowner, the perfect prelude to the feast to come.
Dinners are always a special occasion – casual but intimate and abundant, with three or four courses and a fantastic dessert. Chicken, beef or fish with a variety of accompaniments such as soup, salad and fresh bread are often on the menu. Depending on the day’s schedule and location, each meal will be either buffet or table service but always fresh and delicious and always leisurely.
One other thing that we can promise is ambiance. Most meals will be served outdoors so that you may take in the fresh air and beautiful natural surroundings, perhaps dining on the river to the raucous cries of diving fish eagles, in a dramatic torch-lit boma under the stars, or on the Serengeti plains in the incredibly peaceful African bush.
Excepting only the most premium imported cognacs, champagnes and cigars, all food and beverages are included in the price of your safari so you will never need to think about these incidentals during your stay here.
